I made my first tres leche cake about a year and a half ago and I wasn't impressed. Definitely wasn't a fan. I decided to level one up and max it out for my birthday this year.
This is a refrigerator cake, so keep it in the fridge. If you live alone, find people to share this with so you won't wind up in a hospital. If you are diabetic, this will kill you. Nibble. Slowly. I'm serious. Ok, I jest. 😐 But seriously, eat responsibly.
Preheat oven to 350.
THE CAKE
Mix 5 eggs and 1 cup sugar. (I'm not into whipping egg whites and folding. I'm lazy.)
Add 1/2 cup buttermilk (counts as first milk) and 1 tsp vanilla, mix well.
Add 1 1/2 cups gluten free Bisquick baking mix. (Seriously, lazy.) (If you are using regular flour, also add 1 1/2 t. soda or baking powder and 1/2 tsp salt.) Mix well.
Bake until toothpick test comes out clean. Let cool 30 min (keep it in the pan!). Prick holes all over with fork.
THE SOAK
Whisk together 1 can sweetened condensed milk, 1/2 cup coconut milk, and 1/2 cup heavy cream. Slowly pour all over the top of the cake. Put in refrigerator 30 min. (this counts for 3 more milks)
THE TOPPING
Make your own 👉whipped cream👈 or use premade whipped cream from a can or tub. (this counts for another milk) Spread over the whole cake. Store this cake in the fridge.
THE CARAMEL SAUCE
Again, 👉make your own👈 (I use evap milk) or use premade. (counts for the final milk) Drizzle over cake servings.
I imagine one could substitute things like almond milk and whatnot, switch toppings around (strawberry drizzle?), layer sliced bananas under the whipped cream topping, go to town with this one. Here's a thought, layer pudding over the cake, then spread the whipped cream over that to add another milk. 😂 So like, you'd have a Boston cream siete (7) leche cake. 😁 Wonder if there is anyone out there who has leveled up to ten milks...
